  • 1 1/2 cups rolled oats
  • 1/3 cup unsweetened shredded coconut
  • 1/4 cup raisins or chopped dates
  • 1/4 cup chopped walnuts or pecans
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch of salt

Wet Ingredients:

  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, grated carrots, shredded coconut, raisins, chopped nuts, cinnamon, nutmeg, and salt.
  2. Prepare Wet Mixture: In a small saucepan, heat almond butter and maple syrup until smooth. Remove from heat, add vanilla extract, and mix well.
  3. Combine Ingredients: Pour the wet mixture over the dry ingredients and mix thoroughly.
  4. Set Bars: Line a baking dish with parchment paper, press the mixture into the pan, and refrigerate for at least 2 hours until firm.
  5. Serve: Cut into bars and store in the fridge for up to a week.
