Description

Indulge in a taste of the tropics with this Hawaiian Banana Bread recipe. Packed with pineapple, coconut, and a hint of nutmeg, this bread is a delightful blend of flavors that will transport you to a sunny beach in Hawaii with every bite.

Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas (about 3 bananas)
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup chopped macadamia nuts or walnuts (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F. Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. Cream Butter and Sugar: In a large mixing bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and mashed bananas until well combined.
  4. Combine Wet and Dry: Gently fold the dry ingredients into the banana mixture until just combined. Stir in the crushed pineapple, shredded coconut, and nuts if using.
  5. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra tropical flavor, sprinkle additional coconut on top before baking.
  • This bread also freezes well—wrap tightly and store for up to 2 months.
