Ingredients

Zucchini and Halloumi:

  • 2 medium zucchinis, sliced into thin strips lengthwise
  • 7 oz halloumi cheese, sliced
  • 2 tablespoons olive oil

For the Salad:

  • 1 cup frozen peas, thawed
  • 1/4 cup fresh mint leaves, chopped

For the Dressing:

  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh lemon juice

Instructions
