Marinade:
- 1 cup salsa verde
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Other:
- 4 boneless, skinless chicken breasts
- 4 slices pepper jack cheese
- 2 tablespoons chopped fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Prepare the Marinade: In a bowl, combine salsa verde, olive oil, garlic powder, cumin, smoked paprika, salt, and pepper. Reserve 1/4 cup for basting.
- Marinate the Chicken: Place chicken in a bag, pour the marinade over, and refrigerate for 30 minutes to 4 hours.
- Grill the Chicken: Grill chicken for 5–6 minutes per side. Baste with reserved marinade and top with pepper jack cheese. Melt the cheese.
- Finish and Serve: Rest the chicken, garnish with cilantro, and serve with lime wedges.

- For more flavor, marinate the chicken overnight.
