Instructions

  1. Prepare the Marinade: In a bowl or zip-top bag, combine orange juice, lime juice, minced garlic, olive oil, ground cumin, dried oregano, salt, and black pepper. Mix well to create the flavorful mojo marinade.
  2. Marinate the Chicken: Add the boneless skinless chicken breasts to the marinade, ensuring they are fully submerged. Refrigerate for at least 1 hour or up to 8 hours to allow the chicken to absorb the vibrant flavors.
  3. Grill the Chicken: Preheat your grill to medium-high heat. Remove chicken breasts from the marinade and place them on the grill. Cook for 5 to 6 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through. Remove from grill and let rest briefly.
  4. Slice the Chicken: After resting, slice the grilled mojo chicken thinly to prepare for layering in the sandwich.
