Description

Delicious grilled artichokes marinated in a zesty mixture of olive oil, lemon juice, and garlic, served with a creamy garlic aioli dip. Perfect as a flavorful appetizer or side dish, this recipe highlights tender artichokes with smoky grill marks and a rich, garlicky accompaniment.

Ingredients

Scale

Artichokes

  • 4 fresh artichokes
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • Salt and pepper to taste

Garlic Aioli

  • 1/2 cup mayonnaise
  • 2 garlic cloves, minced (from the original 3, separate some for aioli)
  • Juice of 1/2 lemon (estimated for balance in aioli)
  • Salt and pepper to taste

Instructions

  1. Prepare the Artichokes: Rinse artichokes under cold water thoroughly. Trim the top inch off each artichoke and cut the stems to create a flat base for stability while grilling.
  2. Remove Tough Leaves: Peel away the tough outer leaves until you reach the tender, lighter-colored leaves inside, exposing the heart area for better flavor absorption and tenderness.
  3. Marinate Artichokes: In a bowl, combine extra virgin olive oil, juice of 1 lemon, minced garlic, salt, and pepper. Brush this marinade generously over each artichoke, ensuring all sides are covered.
  4. Preheat Grill: Heat the grill to medium heat, approximately 375°F (190°C), to prepare for grilling the artichokes.
  5. Grill the Artichokes: Place the marinated artichokes on the grill. Cook for 25 to 30 minutes, turning occasionally, until the artichokes are tender when pierced and have nice char marks for a smoky flavor.
  6. Make Garlic Aioli: In a small bowl, combine mayonnaise, the remaining minced garlic, juice of half a lemon, and season with salt and pepper to taste. Mix well until smooth and creamy.
  7. Serve: Serve the grilled artichokes hot, accompanied by the garlic aioli for dipping, enhancing their smoky and zesty flavors.

Notes

  • Ensure artichokes are fresh for the best flavor and tenderness.
  • You can steam artichokes briefly for 5-10 minutes before grilling to reduce overall cooking time if desired.
  • Adjust garlic quantity in aioli to your taste preference.
  • Leftover aioli can be stored in the refrigerator for up to 3 days.
  • To avoid browning, rub cut artichokes with lemon juice immediately after trimming.
