Green Beans Almondine:

  • 1 pound fresh green beans (trimmed)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • â…“ cup sliced almonds
  • 2 garlic cloves (minced)
  • juice of ½ lemon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • lemon zest and chopped parsley (for garnish, optional)

Instructions

  1. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and blanch for 2–3 minutes until bright green and slightly tender. Drain and transfer to an ice bath. Drain again and set aside.
  2. Sauté Almonds and Garlic: In a skillet, melt butter with olive oil over medium heat. Add almonds and toast until golden brown. Add garlic and cook briefly.
  3. Cook the Green Beans: Add the blanched green beans to the skillet and sauté until heated through and tender-crisp. Season with salt, pepper, and lemon juice.
  4. Garnish and Serve: Garnish with lemon zest and parsley if desired. Serve warm.

  • You can blanch the green beans a day in advance and store them in the fridge to save time.
