  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Orzo Mixture:

  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 1 cup uncooked orzo pasta
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 1/2 cup chicken broth
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives (sliced)
  • 1/2 cup baby spinach (chopped)
  • zest and juice of 1 lemon
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the Oven: Preheat oven to 375°F (190°C).
  2. Cook Chicken: Season and cook chicken in olive oil until browned. Set aside.
  3. Sauté Onions: Sauté onions, then add garlic and orzo. Stir in tomatoes, broth, and seasonings.
  4. Combine Ingredients: Return chicken to the pan, add spinach, olives, and feta. Bake covered.
