Chicken:
- 1 lb boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
- 2 tablespoons olive oil (divided)
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Orzo Mixture:
- 1 small yellow onion (diced)
- 3 garlic cloves (minced)
- 1 cup uncooked orzo pasta
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1/2 cup chicken broth
- 1/2 cup crumbled feta cheese
- 1/4 cup Kalamata olives (sliced)
- 1/2 cup baby spinach (chopped)
- zest and juice of 1 lemon
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the Oven: Preheat oven to 375°F (190°C).
- Cook Chicken: Season and cook chicken in olive oil until browned. Set aside.
- Sauté Onions: Sauté onions, then add garlic and orzo. Stir in tomatoes, broth, and seasonings.
- Combine Ingredients: Return chicken to the pan, add spinach, olives, and feta. Bake covered.
- Finish and Serve: Rest dish, garnish with parsley, and serve hot.
