Ingredients
Scale
Main Ingredients
- 1 pound ground chicken
- 1/3 cup breadcrumbs
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon onion powder
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 egg
- Salt and black pepper to taste
- 1 tablespoon olive oil (for cooking)
Instructions
- Combine Ingredients: In a large bowl, mix the ground chicken, breadcrumbs, crumbled feta, chopped parsley, dill, minced garlic, dried oregano, onion powder, lemon zest, lemon juice, egg, salt, and pepper until just combined. Avoid overmixing to keep the meatballs tender.
- Form Meatballs: Using your hands or a small scoop, shape the mixture into 1 to 1.5-inch meatballs, making sure they are evenly sized for uniform cooking.
- Heat Oil: Warm the olive oil in a large skillet over medium heat to ensure a good sear on the meatballs.
- Cook Meatballs: Place the meatballs in the skillet in a single layer. Cook for 4–5 minutes on one side until golden brown, then turn and cook another 4–5 minutes until cooked through and the internal temperature reaches 165°F (74°C).
- Serve: Remove the meatballs from the skillet and serve warm. They pair wonderfully with tzatziki sauce, pita bread, or on top of a fresh salad.
Notes
- For a lighter option, bake meatballs at 400°F for 18–20 minutes instead of frying.
- These meatballs are great for meal prepping and taste delicious served cold in wraps or bowls.
- If you don’t have fresh herbs, substitute with 1 teaspoon dried parsley and 1/2 teaspoon dried dill.
- Use gluten-free breadcrumbs to make the recipe gluten-free.
