Description

These Greek Chicken Gyros are a delicious and flavorful meal featuring marinated grilled chicken wrapped in warm pita bread with fresh veggies and tangy tzatziki sauce. Perfect for a quick and satisfying dinner!

For the Chicken:

  • 1 ½ pounds boneless, skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 3 tablespoons plain Greek yogurt
  • 3 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For serving:

  • warm pita bread
  • sliced tomatoes
  • sliced red onion
  • shredded lettuce
  • crumbled feta cheese
  • tzatziki sauce

Instructions

  1. Marinate the Chicken: In a large bowl or zip-top bag, whisk together olive oil, Greek yogurt, lemon juice, garlic, red wine vinegar, oregano, salt, and pepper. Add the chicken and coat evenly. Marinate for at least 1 hour.
  2. Grill the Chicken: Preheat a grill or skillet. Grill the chicken for 5–6 minutes per side until cooked through. Let rest, then slice thinly.
  3. Assemble the Gyros: Warm the pita bread and fill with sliced chicken, tomatoes, red onion, lettuce, feta, and tzatziki sauce. Serve hot.

  • For meal prep, cook and slice chicken in advance and store for up to 4 days.
