For the Chicken:
- 1 ½ pounds boneless, skinless chicken thighs or breasts
- 3 tablespoons olive oil
- 3 tablespoons plain Greek yogurt
- 3 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
For serving:
- warm pita bread
- sliced tomatoes
- sliced red onion
- shredded lettuce
- crumbled feta cheese
- tzatziki sauce
Instructions
- Marinate the Chicken: In a large bowl or zip-top bag, whisk together olive oil, Greek yogurt, lemon juice, garlic, red wine vinegar, oregano, salt, and pepper. Add the chicken and coat evenly. Marinate for at least 1 hour.
- Grill the Chicken: Preheat a grill or skillet. Grill the chicken for 5–6 minutes per side until cooked through. Let rest, then slice thinly.
- Assemble the Gyros: Warm the pita bread and fill with sliced chicken, tomatoes, red onion, lettuce, feta, and tzatziki sauce. Serve hot.
Notes
- For meal prep, cook and slice chicken in advance and store for up to 4 days.
- Naan or flatbread can be used as a substitute for pita.
