Description

Brownie Base:

  • 1/2 cup unsalted butter
  • 1 cup semisweet chocolate chips
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

Coconut Pecan Topping:

  • 1/2 cup evaporated milk
  • 1/2 cup brown sugar
  • 1 large egg yolk
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 3/4 cup sweetened shredded coconut
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly grease.
  2. Melt chocolate and butter: In a saucepan, melt butter and chocolate chips over low heat until smooth. Remove from heat.
  3. Mix batter: Whisk in sugar, then eggs and vanilla. Stir in flour and salt until just combined.
  4. Bake: Pour batter into pan and bake for 25–28 minutes until a toothpick comes out with moist crumbs. Cool.
  5. Make topping: Combine milk, sugar, egg yolk, and butter in a saucepan. Cook until thickened. Stir in vanilla, coconut, and pecans.
  6. Assemble: Spread topping over cooled brownies. Chill for 20 minutes before slicing.
