Instructions
- Prepare Vegetables: Chop ripe tomatoes, red bell pepper, cucumber, and red onion into manageable pieces. Mince the garlic cloves finely.
- Add Ingredients to Blender: In a blender or food processor, combine the chopped tomatoes, bell pepper, cucumber, red onion, and garlic along with olive oil, red wine vinegar, lemon juice, salt, and black pepper for seasoning.
- Add Bread (Optional): Tear the day-old bread into small pieces and add it to the blender to help thicken the gazpacho, if desired.
- Blend Mixture: Blend all ingredients until smooth, ensuring a creamy consistency. Add cold water gradually and blend again until fully combined and reaching the desired consistency.
- Adjust Seasoning: Taste the gazpacho and adjust salt, pepper, or vinegar levels as needed to balance flavors.
- Chill: Pour the soup into a container and refrigerate for at least 2 hours to develop flavor and serve cold.
- Serve: Stir well before serving. Optionally garnish with diced vegetables, fresh herbs like parsley or basil, or a drizzle of olive oil for extra flavor and presentation.
