- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 cup long grain white rice (uncooked)
- 2 cups chicken broth (or vegetable broth)
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- In a medium saucepan, heat olive oil and butter over medium heat until melted. Add the minced garlic and sauté for 1 to 2 minutes until fragrant, but not browned.
- Stir in the uncooked rice and cook for another 1 to 2 minutes, coating the rice in the garlic butter mixture.
- Pour in the chicken broth, add salt and pepper, and bring to a boil. Reduce the heat to low, cover, and simmer for 15 to 18 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the grated Parmesan cheese.
- Garnish with chopped parsley if desired, and serve warm.

- For a creamier texture, stir in a splash of heavy cream or milk with the Parmesan.
