Description

These Garlic Parmesan Hasselback Potatoes are a delightful twist on classic baked potatoes. With a crispy exterior and a tender inside, these flavorful spuds are perfect as a side dish for any meal.

Ingredients

Scale

Potatoes:

  • 4 medium Yukon Gold or Russet potatoes

Garlic Butter Mixture:

  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme or Italian seasoning

Topping:

  • 1/2 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F.
  2. Prepare Potatoes: Wash and dry the potatoes. Slice each potato thinly across the top, about 1/8 inch apart, without cutting all the way through.
  3. Make Garlic Butter Mixture: In a small bowl, combine melted butter, olive oil, minced garlic, salt, pepper, and thyme.
  4. Coat Potatoes: Brush the garlic butter mixture over the potatoes, ensuring it gets between the slices.
  5. Bake: Bake for 45–55 minutes, basting with more garlic butter occasionally.
  6. Add Topping: In the last 10 minutes, sprinkle Parmesan cheese over the potatoes and bake until golden and crispy.
  7. Garnish and Serve: Garnish with parsley before serving.

Notes

  • Use chopsticks or wooden spoons to prevent cutting through the potato.
  • Pair with sour cream or garlic aioli for dipping.
