  • 1 medium yellow onion (sliced)
  • 4 garlic cloves (minced)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the Potatoes: Heat 1 tablespoon of olive oil in a large skillet. Add potatoes, season, and cook until golden and tender. Set aside.
  2. Cook the Chicken: Add remaining oil and butter to the skillet. Cook chicken until browned. Add onion, garlic, and seasonings.
  3. Combine Ingredients: Return potatoes to the skillet, add broth, and simmer until cooked through.
  4. Serve: Garnish with parsley and serve hot.
