Potatoes:
- 1 ½ lbs baby potatoes (halved or quartered)
Other:
- 2 tablespoons olive oil (divided)
- 1 tablespoon unsalted butter
- 1 medium yellow onion (sliced)
- 4 garlic cloves (minced)
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- 1/4 cup chicken broth
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the Potatoes: Heat 1 tablespoon of olive oil in a large skillet. Add potatoes, season, and cook until golden and tender. Set aside.
- Cook the Chicken: Add remaining oil and butter to the skillet. Cook chicken until browned. Add onion, garlic, and seasonings.
- Combine Ingredients: Return potatoes to the skillet, add broth, and simmer until cooked through.
- Serve: Garnish with parsley and serve hot.
Notes
- For a crispier finish, place the skillet under the broiler for 2–3 minutes at the end.
