Ingredients
Scale
Potatoes and Seasonings
- 2 pounds baby potatoes, halved
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika (optional)
Oils and Herbs
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
Optional
- Grated Parmesan cheese for serving
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough to roast the potatoes, creating a crispy outer layer and tender interior.
- Prepare the Potatoes: In a large bowl, combine the halved baby potatoes with olive oil, minced garlic, salt, black pepper, dried rosemary, dried thyme, and optional paprika. Toss everything thoroughly so each potato piece is evenly coated with the herbs and oil.
- Arrange for Roasting: Spread the seasoned potatoes out in a single layer on a baking sheet lined with parchment paper, making sure they have enough space to roast evenly and become crispy without steaming.
- Roast the Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 25 to 30 minutes. Flip the potatoes halfway through the cooking time to ensure even browning and crispiness on all sides.
- Finish and Serve: Once the potatoes are golden brown and crispy on the edges, remove them from the oven. Immediately sprinkle with fresh chopped parsley and grated Parmesan cheese if desired. Serve hot as a perfect side dish for any meal.
Notes
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes before roasting and pat them dry thoroughly to remove excess moisture.
- You can swap dried herbs with fresh ones by using 1 tablespoon of each for a brighter, fresher flavor.
