Ingredients
Scale
Crust
- 1 (16.5 oz) package refrigerated sugar cookie dough
Cream Cheese Topping
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
Fruit Toppings
- 2 kiwis, peeled and sliced
- 1 cup strawberries, hulled and sliced
- ½ cup blueberries
- ½ cup mandarin orange segments, drained if canned
- ½ cup grapes, halved
Optional Glaze
- ¼ cup apricot preserves or orange marmalade
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready when you prepare the crust.
- Prepare the Crust: Press the sugar cookie dough evenly onto a greased or parchment-lined 12-inch pizza pan, forming a uniform crust base.
- Bake the Crust: Place the pan in the oven and bake for 12 to 14 minutes or until the cookie crust is lightly golden. Remove from the oven and let it cool completely before adding toppings.
- Make the Cream Cheese Layer: In a medium bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and fluffy to create a creamy topping.
- Assemble the Pizza: Spread the cream cheese mixture evenly over the cooled cookie crust, smoothing it into a thin layer.
- Add the Fruit: Arrange sliced kiwis, strawberries, blueberries, mandarin orange segments, and halved grapes on top of the cream cheese layer in a decorative or circular pattern.
- Optional Glaze: For a shiny and appealing finish, gently warm the apricot preserves or orange marmalade and brush it over the fruit.
- Chill: Place the assembled fruit pizza in the refrigerator for at least 30 minutes to set before slicing and serving.
Notes
- Use any seasonal fruits or your personal favorites to customize the fruit topping.
- The cookie crust and cream cheese layer can be prepared a day in advance and refrigerated; add fresh fruit just before serving for optimal freshness.
- If apricot preserves or marmalade aren’t available, a light drizzle of honey can also provide a similar glossy effect.
- Make sure the crust is completely cooled before applying the cream cheese topping to prevent melting.
