  • 5 tablespoons unsalted butter, melted

For the filling:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 ounces unsweetened chocolate, melted and cooled
  • 2 teaspoons vanilla extract
  • 4 large pasteurized eggs

For the topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • chocolate curls or shavings for garnish

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F. Line a 9×9-inch baking pan with parchment paper.
  2. Make the crust: Combine crushed cookies and melted butter, press into pan, and bake for 8 minutes.
  3. Prepare the filling: Beat butter and sugar, mix in chocolate and vanilla, then add eggs one at a time, beating well after each addition.
  4. Assemble: Spread filling over cooled crust.
  5. Add the topping: Whip cream with sugar and vanilla until stiff peaks form, spread over filling.
