Pasta:

  • 12 oz rotini or bowtie pasta

Caramelized Onions:

  • 2 tablespoons butter
  • 2 large yellow onions, thinly sliced
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • 1 teaspoon balsamic vinegar

Dressing:

  • 1 cup sour cream
  • ½ cup mayonnaise
  • 1 packet (1 oz) French onion soup mix
  • 1 teaspoon Dijon mustard

Additional Ingredients:

  • 1 cup shredded Swiss or Gruyère cheese
  • ½ cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and rinse under cold water; set aside.
  2. Caramelize the Onions: In a large skillet, melt the butter over medium heat. Add sliced onions, salt, and sugar, and cook slowly for 20–25 minutes until deep golden. Stir in balsamic vinegar and cook 1–2 more minutes. Remove from heat and let cool.
  3. Prepare the Dressing: In a large bowl, whisk together sour cream, mayonnaise, French onion soup mix, and Dijon mustard until smooth.
  4. Combine Ingredients: Add cooked pasta, caramelized onions, shredded cheese, and chopped green onions to the dressing. Toss everything together until evenly coated.
  5. Chill and Serve: Chill in the refrigerator for at least 1 hour before serving. Season with salt and pepper to taste.
