Ingredients

Scale

Pasta:

  • 12 ounces pasta (fettuccine or linguine)

Caramelized Onions:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • 2 cloves garlic, minced

Sauce:

  • ½ cup dry white wine or vegetable broth
  • 1 cup beef or vegetable broth
  • ½ cup heavy cream
  • 1 cup shredded Gruyère cheese (or Swiss)
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste

Garnish:

  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Caramelize the Onions: In a large skillet, melt butter with olive oil over medium heat. Add sliced onions, salt, and sugar. Cook for 20–25 minutes until caramelized. Add thyme and garlic, cook for 1 minute.
  3. Prepare the Sauce: Deglaze the pan with white wine (or broth), simmer for 2–3 minutes. Stir in broth and cream, bring to a simmer. Add Gruyère and Parmesan cheeses, stir until melted.
  4. Combine and Serve: Add cooked pasta to the sauce, toss to coat, using reserved pasta water as needed. Season with salt and pepper. Serve warm, garnished with parsley if desired.

Notes

  • For extra richness, top each serving with more Gruyère and broil briefly until bubbly.
  • Use gluten-free pasta to make it gluten-free.
