Scale
Main Ingredients
- 2 cups instant white rice
- 2 cups water
- 2 cups cooked chopped chicken (about half of a rotisserie chicken)
- 1 cup refrigerated sour cream French onion dip
- 1 (10.5-oz) can unsalted cream of chicken soup
- ½ cup chicken broth
- 1 cup shredded cheddar cheese
- ½ cup French fried onions
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350ºF. Lightly spray a 9×13-inch baking pan with cooking spray to prevent sticking and set it aside for later.
- Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Stir in the instant white rice, cover, then turn off the heat. Let the rice sit covered for 5 minutes until all the water is absorbed and the rice is fully cooked and fluffy.
- Mix Ingredients: In a large bowl, combine the cooked chopped chicken, cream of chicken soup, sour cream French onion dip, shredded cheddar cheese, chicken broth, and the cooked rice. Stir everything together until well mixed to evenly incorporate all flavors.
- Assemble and Top: Spread the mixture evenly into the prepared 9×13-inch baking pan. Sprinkle the French fried onions evenly over the top to add a crunchy, savory finish.
- Bake: Place the pan in the preheated oven and bake for 20 to 25 minutes. Bake until the cheese is melted, bubbly, and the fried onions on top are golden and crispy. Remove from oven and serve hot.
Notes
- You can substitute leftover cooked chicken with rotisserie chicken for convenience.
- For a lower-fat option, use reduced-fat sour cream and cheese.
- If you prefer a bit more sauce, add an extra ¼ cup of chicken broth.
- Make sure to watch the topping towards the end of baking to avoid burning the fried onions.
- This dish can be prepared ahead and baked just before serving.
