For the Biscuit Cups:
- 1 can refrigerated flaky biscuits (8 count)
For the Filling:
- 1/2 pound deli roast beef, sliced thin
- 1 cup shredded provolone or mozzarella cheese
- 1 tablespoon butter
- 1 small onion, thinly sliced
- 1 clove garlic, minced
- 1/2 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1 (10.5 oz) can beef consommé or beef broth
- 1/4 teaspoon black pepper
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F and grease a muffin tin.
- In a skillet over medium heat, melt butter and sauté the onions until soft and caramelized, about 8–10 minutes.
- Add garlic, thyme, and Worcestershire sauce; cook for another minute. Remove from heat.
- Split each biscuit in half horizontally and press each piece into the bottom and up the sides of the muffin cups.
- Layer each with a slice of roast beef, a spoonful of the onion mixture, and a sprinkle of cheese.
- Top with the other biscuit half, pressing gently to seal the edges.
- Bake for 15–18 minutes, or until golden brown.
- While baking, heat the beef consommé or broth in a small saucepan with black pepper until warm.
- Serve biscuits hot with warm au jus for dipping.
Notes
- You can use leftover roast beef instead of deli slices.
- Swap in Swiss cheese for a different flavor.
- These are best served warm but can be reheated in the oven.
