Instructions

  1. Prepare the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for 2-3 minutes per side until they turn pink and are fully cooked. Remove the shrimp from the skillet and set aside to cool.
  2. Cook the Vegetables: In the same skillet, add the chopped onion, minced garlic, and diced bell pepper if using. Sauté for 3-4 minutes until the vegetables are softened and fragrant.
  3. Make the Filling: In a medium bowl, whisk together the heavy cream, eggs, mayonnaise, lemon juice, Old Bay seasoning, smoked paprika, salt, and pepper. Once the shrimp has cooled, chop it into bite-sized pieces and add it to the mixture along with the sautéed vegetables. Stir everything together until well combined.
  4. Assemble the Pie: Preheat your oven to 375°F (190°C). Roll out the pie crust and fit it into a 9-inch pie dish. Pour the shrimp filling evenly into the crust. If desired, sprinkle shredded cheddar cheese on top to add extra flavor.
