Ingredients
Scale
Ingredients:
- 1 tablespoon butter
- 1 leek (white and light green parts only, thinly sliced)
- 4 cups fish stock or water
- 4 medium potatoes (peeled and diced)
- 2 carrots (peeled and sliced)
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 bay leaf
- ¾ pound skinless salmon fillet (cut into chunks)
- 1 cup heavy cream
- 2 tablespoons chopped fresh dill
Instructions
- In a large pot, melt the butter over medium heat. Add the sliced leek and sauté for 5–6 minutes until soft and fragrant.
- Pour in the fish stock or water and bring to a boil. Add the diced potatoes, sliced carrots, salt, pepper, and bay leaf. Reduce heat and simmer for 15 minutes or until the vegetables are just tender.
- Add the salmon chunks and continue to simmer gently for another 5–7 minutes, or until the fish is cooked through and flakes easily.
- Stir in the heavy cream and let the soup heat through without boiling. Remove from heat, discard the bay leaf, and stir in the fresh dill.
- Serve warm with rye bread or crusty rolls.
Notes
- For a lighter version, substitute milk for the cream.
- Arctic char or trout can be used in place of salmon.
- This soup tastes even better the next day as the flavors deepen.
