Instructions
- Prepare the Dough: In a stand mixer, combine the sifted bread flour, instant yeast, sugar, and salt. Add the fat-free Greek yogurt and begin kneading on low speed. Gradually pour in the water (or milk chosen) until a dough begins to form. Continue kneading for 8 to 10 minutes until the dough is smooth and stretchy.
- Let the Dough Rise: Transfer the dough to a greased bowl, cover with a clean towel or plastic wrap, and let it rise at room temperature for 60 to 90 minutes, or until it doubles in size.
- Make the Filling: In a small bowl, mix the brown sugar and cinnamon powder thoroughly. Set aside.
- Shape the Rolls: Once the dough has risen, punch it down to release the air. Roll it out on a lightly floured surface into an 18 x 10-inch rectangle. Lightly brush the surface with water or almond milk, then evenly sprinkle the cinnamon sugar mixture over the dough.
