Description

Delicious and crispy egg and sausage breakfast taquitos made with scrambled eggs, flavorful breakfast sausage, and shredded cheddar cheese, all rolled in corn tortillas and fried to golden perfection. Perfect for a satisfying breakfast or brunch, these taquitos can be served with salsa, guacamole, or sour cream for added flavor.

Ingredients

Scale

Filling

  • 1/2 lb breakfast sausage (or any ground sausage)
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • Salt and pepper, to taste

Taquitos

  • 10 small corn tortillas
  • 2 tablespoons vegetable oil (for frying)

Optional Toppings

  • Salsa
  • Guacamole
  • Sour cream
  • Hot sauce

Instructions

  1. Cook the Sausage: In a large skillet, cook the sausage over medium heat, breaking it into crumbles as it cooks. Continue cooking until browned and fully cooked through. Remove from skillet and set aside.
  2. Scramble the Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Using the same skillet, scramble the eggs over medium heat until fully cooked and no longer runny. Set aside.
  3. Warm the Tortillas: Warm the corn tortillas by placing them in a dry skillet for about 30 seconds on each side or microwave them for 10-15 seconds until soft and pliable.
  4. Assemble the Taquitos: Place about 2 tablespoons of cooked sausage and scrambled eggs on each tortilla. Sprinkle with shredded cheddar cheese.
  5. Roll the Taquitos: Carefully roll each tortilla tightly around the filling to form a taquito. Use a toothpick to secure the edge if needed.
  6. Fry the Taquitos: Heat the vegetable oil in a skillet over medium heat. Once hot, add the taquitos seam-side down carefully. Fry for 2-3 minutes on each side or until golden brown and crispy. Remove and drain excess oil on a paper towel-lined plate.
  7. Serve: Serve the taquitos warm with your favorite toppings like salsa, guacamole, or sour cream. Enjoy!

Notes

  • You can substitute breakfast sausage with turkey sausage or a vegetarian sausage alternative.
  • For a healthier option, you can bake the taquitos at 400°F for 12-15 minutes instead of frying.
  • Be careful when frying to avoid overcrowding the skillet; fry in batches if necessary.
  • Remove toothpicks before serving to avoid any choking hazard.
  • Leftover taquitos can be refrigerated and reheated in an oven or air fryer for best crispiness.
