Description

Eclair Cake is a simple and delicious no-bake dessert featuring layers of graham crackers, creamy vanilla pudding, whipped topping, and a rich chocolate frosting topping. It requires minimal prep and no cooking, making it a perfect treat to prepare ahead and enjoy chilled.

Ingredients

Scale

Base

  • 1 box (14.4 oz) graham crackers

Pudding Mixture

  • 2 packages (3.4 oz each) instant vanilla pudding mix
  • 2 1/2 cups cold whole milk
  • 1 container (8 oz) whipped topping (like Cool Whip)

Topping

  • 1 tub (16 oz) chocolate frosting

Instructions

  1. Prepare the pudding mixture: In a large bowl, whisk together the instant vanilla pudding mix and cold whole milk for about 2 minutes until the mixture thickens. Gently fold in the whipped topping until fully combined, creating a smooth and creamy filling.
  2. Assemble the layers: In a 9×13-inch baking dish, arrange a single layer of graham crackers to cover the bottom evenly. Spread half of the prepared pudding mixture over the graham crackers. Add another layer of graham crackers on top, then spread the remaining pudding mixture. Finish by placing a final layer of graham crackers over the top.
  3. Apply the chocolate topping: Remove the foil lid from the tub of chocolate frosting and microwave the frosting for 20 to 30 seconds until it becomes just pourable. Stir well, then spread the frosting evenly over the top layer of graham crackers to create a smooth chocolate topping.
  4. Chill the cake: Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours or preferably overnight. This resting time allows the graham crackers to soften and the layers to set perfectly.
  5. Serve: Once chilled and set, slice the cake into servings and enjoy this creamy, chocolate-topped no-bake dessert chilled.

Notes

  • For extra flavor, try using French vanilla or cheesecake-flavored instant pudding instead of regular vanilla pudding.
  • Instead of chocolate frosting, you can make a homemade chocolate ganache for a richer topping.
