  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 pound ground turkey

Spices:

  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Additional Ingredients:

  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup chicken broth

Optional Toppings:

  • shredded cheese
  • sour cream
  • chopped green onions
  • fresh cilantro

Instructions

  1. Heat olive oil: In a large pot, heat olive oil over medium heat.
  2. Cook vegetables: Add onion and bell pepper, cook until softened. Stir in garlic.
  3. Cook turkey: Add ground turkey, cook until no longer pink.
  4. Add spices: Stir in chili powder, cumin, smoked paprika, salt, and pepper.
  5. Combine ingredients: Add tomatoes, tomato sauce, beans, and broth. Simmer.
  6. Serve: Cook uncovered for 25–30 minutes. Serve hot with toppings.

Notes

  • For extra heat, add a diced jalapeño with the onion and pepper.
