Instructions

  1. Preheat and prepare vegetables: Preheat your oven to 400°F (200°C). Place the halved tomatoes, quartered onion, and peeled garlic cloves onto a baking sheet.
  2. Season and roast: Drizzle the vegetables with olive oil and sprinkle with salt, black pepper, and thyme. Toss them gently to ensure even coating and spread in a single layer. Roast for 35–40 minutes until the tomatoes are soft and slightly caramelized.
  3. Blend the roasted vegetables: Remove the baking sheet from the oven and transfer the roasted vegetables into a blender or food processor. Add the vegetable broth and blend until smooth and creamy.
