    Fish:

  • 4 whole mackerel, cleaned and gutted
  • Seasoning:

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 lemon, thinly sliced
  • juice of 1 lemon
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • salt and black pepper to taste

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare the fish: Rinse the mackerel and pat dry. Place on a baking sheet lined with parchment paper.
  3. Season the fish: In a bowl, mix olive oil, garlic, oregano, paprika, lemon juice, salt, and pepper. Rub inside and outside of each fish with the mixture.
  4. Stuff the fish: Stuff each cavity with lemon slices and red onion. Scatter remaining onion and cherry tomatoes around the fish.
  5. Bake: Bake for 18-22 minutes until fish is cooked through.
  6. Finish and serve: Sprinkle with parsley, serve with lemon wedges.
