  • ¼ cup coconut flour
  • ¼ cup powdered sugar

  • ½ cup unsalted butter, melted

For the filling:

  • ¾ cup fresh lemon juice (about 4 lemons)
  • 1 tablespoon lemon zest
  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 tablespoons coconut flour
  • 2 tablespoons cornstarch
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Prepare the crust: In a medium bowl, mix almond flour, coconut flour, powdered sugar, salt, and melted butter until a soft dough forms. Press the dough evenly into the bottom of the pan. Bake for 12–14 minutes until lightly golden.
  3. Make the filling: In another bowl, whisk lemon juice, lemon zest, eggs, granulated sugar, coconut flour, and cornstarch until smooth. Pour the filling over the hot crust.
  4. Bake: Return to the oven and bake for 18–22 minutes, or until the center is set.
  5. Cool and chill: Cool at room temperature, then chill in the refrigerator for at least 2 hours.
  6. Finish: Dust with powdered sugar before slicing and serving if desired.
