  • 3 cups powdered sugar

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners to prepare for baking.
  2. Mix cupcake batter: In a large bowl, combine the yellow cake mix, eggnog, vegetable oil, eggs, ground nutmeg, and vanilla extract. Beat with a hand mixer on medium speed for about 2 minutes until the batter is smooth and fluffy.
  3. Fill cupcake liners: Divide the batter evenly among the cupcake liners, filling each about two-thirds full to allow room for rising.
  4. Bake cupcakes: Bake in the preheated oven for 18–22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  5. Cool cupcakes: Remove the cupcakes from the oven and let them cool completely on a wire rack before frosting.
  6. Make frosting: Beat the softened unsalted butter in a bowl until creamy. Gradually add powdered sugar, mixing well. Then incorporate eggnog, ground nutmeg, vanilla extract, and a pinch of salt. Beat the frosting until it is light and fluffy.
  7. Decorate cupcakes: Pipe or spread the spiced eggnog buttercream frosting onto the cooled cupcakes. Optionally, sprinkle a little extra ground nutmeg on top for garnish.
