For the Beef:
- 1 1/2 pounds beef stew meat
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Pasta:
- 1 can (14.5 oz) diced tomatoes
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup beef broth
- 8 oz uncooked bowtie pasta (farfalle)
- 1 cup shredded mozzarella or cheddar cheese
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Beef: In a skillet, sear beef stew meat until browned. Transfer to the crockpot.
- Cook the Beef: Add onion, garlic, seasonings, diced tomatoes, soup, and broth to the crockpot. Cook on low for 6–8 hours or high for 3–4 hours.
- Cook the Pasta: Cook bowtie pasta separately, then add to the crockpot along with cheese. Let sit until cheese melts.
- Serve: Garnish with parsley and serve hot.
Notes
- You can substitute cream of mushroom soup with cream of celery or cream of onion if preferred.
- Add peas or chopped spinach at the end for extra veggies.
