Beef Stew:
- 1 1/2 pounds beef stew meat
- 1 tablespoon olive oil
Seasonings:
- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Sauce and Pasta:
- 1 can (14.5 oz) diced tomatoes
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup beef broth
- 8 oz uncooked bowtie pasta (farfalle)
- 1 cup shredded mozzarella or cheddar cheese
- Fresh parsley for garnish (optional)
Instructions
- Sear Beef: In a skillet, brown beef stew meat in olive oil.
- Prepare Crockpot: Transfer beef to crockpot, add onion, garlic, seasonings, diced tomatoes, soup, and broth. Stir.
- Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours.
- Cook Pasta: Cook pasta separately, then add to crockpot along with cheese. Let cheese melt.
- Serve: Garnish with parsley and serve hot.
Notes
- Substitute cream of mushroom soup with cream of celery or onion.
- Add peas or spinach for more veggies.
