  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • ½ cup heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • pinch of ground nutmeg
  • 1 lb fresh spinach (chopped) or 10 oz frozen spinach (thawed and drained)
  • ¼ cup grated Parmesan cheese

Instructions

  1. Melt Butter: In a large skillet, melt butter over medium heat.
  2. Sauté Onion: Add chopped onion and sauté until soft.
  3. Add Garlic: Stir in garlic and cook briefly.
  4. Stir in Flour: Sprinkle in the flour and cook for 1 minute.
  5. Whisk in Milk and Cream: Slowly whisk in the milk and heavy cream until thickened.
  6. Season and Add Spinach: Season with salt, pepper, nutmeg, then add spinach and cook until wilted.
  7. Finish with Parmesan: Stir in Parmesan cheese until smooth and creamy.
  8. Serve: Serve warm.
