Instructions
- Heat the oil and soften onions. Heat olive oil in a large pot over medium heat. Add the finely chopped onion and cook, stirring occasionally, until the onions become soft and translucent, about 3 to 4 minutes.
- Sauté garlic and ginger. Add the minced garlic and grated fresh ginger to the pot and sauté for 30 seconds until fragrant, taking care not to burn the garlic.
- Cook carrots. Stir in the thinly sliced carrots and cook for another 2 to 3 minutes, allowing them to soften slightly while stirring occasionally.
- Add chicken broth and simmer. Pour in the low sodium chicken broth and bring the mixture to a gentle simmer over medium heat.
- Add chicken and soy sauce. Stir in the shredded cooked chicken and soy sauce if using. Let the soup simmer for about 5 minutes to allow the flavors to meld together.
- Cook vermicelli noodles. Add the vermicelli noodles to the soup and cook according to the package instructions, usually around 3 to 4 minutes, until the noodles are tender but not mushy.
- Season the soup. Season the soup with salt and black pepper to taste, adjusting the seasoning as needed.
