These Dynamite Shrimp are crispy, spicy, and utterly delicious. Coated in a creamy, tangy sauce, they make a perfect appetizer or main course.

For the shrimp:
- 1 pound shrimp, peeled and deveined
- 1/2 cup buttermilk
- 1/2 cup cornstarch
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
For the dynamite sauce:
- 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon sweet chili sauce
- 1 teaspoon honey
- 1 teaspoon rice vinegar (optional)
- Pinch of garlic powder
Instructions
- Prepare the dynamite sauce: In a medium bowl, whisk together mayonnaise, sriracha, sweet chili sauce, honey, rice vinegar, and garlic powder. Adjust heat to taste. Chill while preparing shrimp.
- Coat the shrimp: Toss shrimp in buttermilk, then dredge in a mixture of cornstarch, flour, salt, and pepper.
- Fry the shrimp: Heat oil to 350°F, fry shrimp in batches until golden and crispy.
- Toss in sauce: Coat hot shrimp in dynamite sauce. Serve garnished with green onions or sesame seeds.

- For a lighter option, bake or air fry the shrimp and serve over lettuce, rice, or in wraps.
