Streusel Topping

Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is fully heated when the pie is ready to bake.
- Prepare Filling: In a large bowl, combine the chopped rhubarb with granulated sugar, ¼ cup flour, beaten egg, and vanilla extract. Toss gently until all pieces are evenly coated with the mixture.
- Assemble Pie: Pour the rhubarb filling into the unbaked pie crust and smooth out the top to create an even layer.
- Make Streusel Topping: In a separate bowl, mix ½ cup flour, brown sugar, cinnamon, and a pinch of salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add Topping: Sprinkle the streusel mixture evenly over the rhubarb filling, covering it completely.
