Ingredients
Scale
Dry Ingredients
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Wet Ingredients
- 1 cup granulated sugar
- ¾ cup brown sugar, packed
- 3 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Add-ins
- 1 cup shelled pistachios, chopped
- ½ cup dark chocolate chips (optional)
Instructions
- Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans to ensure your cakes don’t stick.
- Combine dry ingredients: In a large bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt. Sifting helps incorporate air and remove lumps for a smooth batter.
- Mix wet ingredients: In a separate bowl, whisk the granulated sugar, brown sugar, and eggs until the mixture is smooth and creamy. Then add the whole milk, vegetable oil, and vanilla extract, mixing until everything is well combined.
- Combine wet and dry: Gradually add the dry ingredient mixture to the wet mixture, stirring gently to combine. Next, slowly pour in the boiling water and stir until the batter is smooth. The batter will be thin, which is normal for this cake.
- Add pistachios and chocolate chips: Fold the chopped pistachios and optional dark chocolate chips into the batter evenly to distribute the flavor and texture.
- Divide and bake: Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes: Remove the cakes from the oven and let them cool in their pans for 10 minutes. Then, carefully transfer the cakes to a wire rack to cool completely before frosting or serving.
Notes
- To enhance the chocolate flavor, use high-quality unsweetened cocoa powder.
- You can substitute the whole milk with buttermilk or a dairy-free milk alternative for a different texture or dietary preference.
- For added flavor, toast the pistachios lightly before chopping.
- If you prefer a nut-free version, omit pistachios and add extra chocolate chips or other mix-ins.
- Allow the cake to cool completely before frosting to prevent melting or sliding.
