Ingredients
Scale
Shortbread Dough
- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon salt
- ¾ cup mini chocolate chips
Chocolate Dipping
- ¾ cup semi-sweet chocolate chips
- 1 teaspoon coconut oil or vegetable oil (optional, for smooth dipping)
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to ensure the shortbread doesn’t stick while baking.
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and powdered sugar until the mixture is light and fluffy, which helps create a tender cookie texture.
- Add Vanilla and Dry Ingredients: Mix in the vanilla extract. Then, add the all-purpose flour and salt, mixing until a soft dough forms without overworking.
- Fold in Mini Chocolate Chips: Gently fold the mini chocolate chips into the dough, distributing evenly throughout.
- Shape the Dough: On a lightly floured surface, roll the dough out to about ½ inch thickness. Cut into sticks, rectangles, or desired shapes using a knife or cookie cutter for appealing presentation.
- Arrange and Bake: Place the cut pieces onto the prepared baking sheet about 1 inch apart to allow for slight spreading. Bake for 12–15 minutes, or until the edges turn lightly golden brown.
- Cool Completely: Remove the cookies from the oven and transfer to a wire rack to cool fully to prevent melting the chocolate dip later.
- Melt Chocolate for Dipping: In a microwave-safe bowl, melt the semi-sweet chocolate chips along with the coconut or vegetable oil (if using) in 20-second intervals, stirring well until the mixture is smooth and glossy for a perfect dip.
- Dip and Set: Dip each shortbread treat halfway into the melted chocolate, making sure they are evenly coated. Place them on parchment paper to allow the chocolate to set.
- Chill to Harden: Chill the dipped shortbread treats in the refrigerator for 10–15 minutes to ensure the chocolate coating hardens before serving.
Notes
- Add a pinch of cinnamon or espresso powder to the dough for an extra depth of flavor.
- Store the shortbread treats in an airtight container at room temperature for up to 1 week to maintain freshness.
