  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 egg, beaten, for egg wash
  • 1 tablespoon coarse sugar, optional, for topping

Instructions

  1. To make the crust: Whisk together flour, salt, and sugar in a large bowl. Cut in cold butter using a pastry blender or fork until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Divide dough in half, shape into discs, wrap in plastic wrap, and chill for at least 1 hour.
  2. Preheat oven to 400°F (200°C). In a large bowl, toss sliced apples with granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, and salt. Roll out one dough disc and fit into a 9-inch pie plate. Fill with the apple mixture and dot with butter. Roll out the second dough disc and place over the filling. Trim and crimp the edges, and cut slits for steam to escape. Brush the top crust with egg wash and sprinkle with coarse sugar if desired.
  3. Bake for 45–55 minutes or until the crust is golden and the filling is bubbly. Cover the edges with foil if browning too quickly. Let cool for at least 2 hours before serving.
