Dandelion Honey:

  • 4 cups dandelion flower heads (yellow parts only, green parts removed)
  • 4 cups water
  • 1 lemon (thinly sliced, seeds removed)
  • 1 vanilla bean or 1 teaspoon vanilla extract (optional)
  • 3 ½ to 4 cups granulated sugar

Instructions

  1. Rinse the Dandelion Flowers: Gently clean the dandelion petals to remove dirt and insects.
  2. Prepare the Mixture: In a large saucepan, combine the dandelion petals, water, lemon slices, and vanilla bean if using. Bring to a boil, then simmer for 30 minutes.
  3. Steep the Mixture: Remove from heat and let steep, covered, for 6–12 hours at room temperature.
  4. Strain and Sweeten: Strain the liquid, measure it, return it to the pot, and add sugar. Cook until honey-like consistency is reached.
  5. Finish and Store: Pour into sterilized jars, cool, and seal. Store in the refrigerator for up to 2 months.
