Ingredients
Scale
Cucumber Rolls:
- 2 large cucumbers
Tuna Avocado Salad:
- 1 can (5 ounces) tuna packed in water (drained)
- 1 ripe avocado, diced
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 2 tablespoons red onion, finely chopped
- 2 tablespoons fresh cilantro or parsley, chopped
- Salt and black pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Slice Cucumbers: Slice the cucumbers lengthwise into thin ribbons using a mandoline or vegetable peeler. Place on a paper towel to remove excess moisture.
- Prepare Filling: In a bowl, combine tuna, avocado, mayonnaise, lemon juice, Dijon mustard, red onion, cilantro, salt, and pepper. Mash gently until creamy but slightly chunky.
- Fill and Roll: Place tuna avocado mixture on one end of each cucumber ribbon. Roll up the cucumber around the filling.
- Serve: Arrange rolls seam-side down on a plate, sprinkle with sesame seeds, and serve immediately.
Notes
- You can use Greek yogurt instead of mayonnaise for a lighter version.
- Add sriracha or chili flakes for a spicy kick.
- If cucumbers are thin, double up the ribbons for sturdier rolls.
