Description

These Cucumber Tuna Avocado Salad Rolls are a refreshing and light dish perfect for a snack or appetizer. Fresh cucumber ribbons are filled with a creamy tuna and avocado mixture, creating a flavorful and satisfying bite.

Ingredients

Scale

Cucumber Rolls:

  • 2 large cucumbers

Tuna Avocado Salad:

  • 1 can (5 ounces) tuna packed in water (drained)
  • 1 ripe avocado, diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons fresh cilantro or parsley, chopped
  • Salt and black pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. Slice Cucumbers: Slice the cucumbers lengthwise into thin ribbons using a mandoline or vegetable peeler. Place on a paper towel to remove excess moisture.
  2. Prepare Filling: In a bowl, combine tuna, avocado, mayonnaise, lemon juice, Dijon mustard, red onion, cilantro, salt, and pepper. Mash gently until creamy but slightly chunky.
  3. Fill and Roll: Place tuna avocado mixture on one end of each cucumber ribbon. Roll up the cucumber around the filling.
  4. Serve: Arrange rolls seam-side down on a plate, sprinkle with sesame seeds, and serve immediately.

Notes

  • You can use Greek yogurt instead of mayonnaise for a lighter version.
  • Add sriracha or chili flakes for a spicy kick.
  • If cucumbers are thin, double up the ribbons for sturdier rolls.
