Instructions
- Prepare the Vegetables: Thinly slice the cucumbers and red onion, and cut the tomatoes into wedges or thick slices. Place all the vegetables into a large mixing bowl.
- Make the Marinade: In a small bowl, whisk together the white vinegar, olive oil, granulated sugar if using, salt, black pepper, and dried oregano until well combined. Adjust seasoning to your taste preference.
- Toss the Salad: Pour the prepared marinade over the vegetables in the large bowl. Thoroughly toss all the ingredients so that they are evenly coated with the marinade.
- Marinate: Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 1 hour, or up to overnight. This resting period allows the flavors to meld and intensify.
- Garnish and Serve: Before serving, give the salad another toss to redistribute the marinade. Garnish with freshly chopped parsley if desired for added color and flavor. Serve chilled.
