Instructions

  1. Blend Ingredients: In a blender, combine the peeled and chopped cucumber, freshly squeezed lime juice, simple syrup, gin, and chopped fresh mint if using. Blend until the mixture is smooth and well combined.
  2. Strain Mixture: Pour the blended mixture through a fine mesh sieve into a bowl, pressing gently with a spoon to extract as much liquid as possible, removing cucumber pulp to ensure a smooth texture for the popsicles.
  3. Add Club Soda: Gently stir the club soda into the strained liquid to incorporate the fizz without losing too much carbonation.
  4. Fill Molds: Pour the mixture into popsicle molds, leaving some space at the top to allow for expansion during freezing. Insert popsicle sticks securely.
  5. Freeze: Place the molds in the freezer and allow them to freeze for at least 6 hours or overnight until the popsicles are fully solidified.
  6. Release Popsicles: To remove the popsicles from the molds, run warm water over the outsides of the molds for a few seconds to loosen them. Enjoy immediately.
