Description

This refreshing Cucumber Cream Cheese Spread is a simple and versatile appetizer that combines the cool crunch of cucumber and green onions with the creamy richness of cream cheese, enhanced by a hint of Worcestershire sauce and a touch of salt. Perfect for serving with crackers, on sandwiches, or as a dip, this spread is easy to make in just 10 minutes and benefits from an overnight chill to deepen the flavors.

Ingredients

Scale

Vegetables

  • 1/2 cucumber, peeled and cut into chunks
  • 3 green onions, trimmed and sliced

Main

  • 8 ounce block cream cheese, softened to room temperature
  • 1 teaspoon Worcestershire sauce
  • 1/8 teaspoon salt

Instructions

  1. Chop the Vegetables: Peel and cut the cucumber into chunks and trim and slice the green onions. Place these prepared vegetables into the bowl of a food processor.
  2. Pulse until Coarsely Chopped: Pulse the cucumber and green onions briefly in the food processor until they are coarsely chopped. Be careful not to over-process; some texture should remain for the best mouthfeel.
  3. Add Remaining Ingredients: Add the softened cream cheese, Worcestershire sauce, and salt to the food processor with the chopped vegetables.
  4. Combine the Ingredients: Process again until everything is just combined. Stop processing before the mixture becomes completely smooth to retain some small pieces of cucumber, giving the spread a pleasant texture.
  5. Transfer and Chill: Scoop the mixture into a bowl, cover tightly, and refrigerate overnight. This resting period allows the flavors to meld and improves the overall taste and texture of the spread.

Notes

  • For best results, soften the cream cheese to room temperature before starting to ensure easier blending.
  • Do not over-process the mixture; retaining some texture gives a better eating experience.
  • The spread tastes best after refrigerating overnight to let the flavors develop.
  • This spread is excellent served with crackers, fresh vegetables, or as a sandwich spread.
  • Worcestershire sauce adds a subtle umami note, but you can adjust the amount to your taste or omit for a milder flavor.
