  • ½ pound deli-sliced ham
  • 8 slices cooked bacon

For the Eggs:

  • 5 large eggs
  • Splash of milk
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions

  1. Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.
  2. Prepare the Eggs: In a bowl, whisk the eggs with a splash of milk, salt, and pepper until well combined.
  3. Cook the Scrambled Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Pour in the egg mixture and scramble gently with a spatula until just set. Remove from heat and set aside.
  4. Slice the Croissants: Slice each croissant in half horizontally, leaving a hinge so they open like a book.
  5. Spread the Dijon Honey: Generously spread the prepared Dijon honey mixture on the inside of each croissant half.
  6. Add Cheese: Place two slices of your preferred cheese on the bottom half of each croissant.
  7. Add Ham and Bacon: Layer slices of deli ham and two slices of cooked bacon on top of the cheese.
  8. Add Scrambled Eggs: Spoon an even portion of scrambled eggs over the ham and bacon.
  9. Close the Sandwiches: Fold the croissants closed to form sandwiches.
