Description

For the Spread:

  • 2 tablespoons Dijon mustard
  • 2 tablespoons salted butter
  • 2 tablespoons honey

For the Sandwiches:

  • 4 large croissants
  • 8 slices cheese (Gouda, baby Swiss, cheddar, or your favorite)
  • ½ pound deli-sliced ham
  • 8 slices cooked bacon

For the Eggs:

  • 5 large eggs
  • Splash of milk
  • Salt and pepper (to taste)
  • 1 tablespoon butter
  • Fresh chives (optional, for garnish)

Instructions

  1. Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.
  2. Prepare the Eggs: In a bowl, whisk together the 5 eggs, a splash of milk, salt, and pepper.
  3. Cook the Scrambled Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once melted, pour in the egg mixture and scramble gently with a spatula until just set. Remove from heat and set aside.
  4. Assemble the Sandwiches: Slice croissants in half horizontally, but not all the way through. Spread a generous amount of the Dijon honey spread on the inside of each croissant.
  5. Add Cheese: Place 2 slices of cheese on the bottom half of each croissant.
  6. Add Ham and Bacon: Layer a few slices of deli-sliced ham and 2 slices cooked bacon on top of the cheese.
  7. Add Eggs: Spoon a portion of the scrambled eggs over the ham and bacon.
  8. Close the Sandwiches: Fold the top half of the croissant over the fillings to form the sandwich.
  9. Toast the Sandwiches (Optional): For a crispy finish, melt 1 tablespoon of butter in a skillet over medium heat. Place the assembled sandwiches in the skillet and cook 2-3 minutes per side until croissants are golden and cheese is melted.
