Delicious and easy Croissant Breakfast Sandwiches featuring a sweet and tangy Dijon honey spread, scrambled eggs, cheese, ham, and bacon all layered inside buttery croissants. Perfect for a satisfying morning meal or brunch.

For the Spread:
- 2 tablespoons Dijon mustard
- 2 tablespoons salted butter
- 2 tablespoons honey
For the Sandwiches:
- 4 large croissants
- 8 slices cheese (Gouda, baby Swiss, cheddar, or your favorite)
- ½ pound deli-sliced ham
- 8 slices cooked bacon
For the Eggs:
- 5 large eggs
- Splash of milk
- Salt and pepper (to taste)
- 1 tablespoon butter
- Fresh chives (optional, for garnish)
Instructions
- Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.
- Prepare the Eggs: In a bowl, whisk together the 5 eggs, a splash of milk, salt, and pepper.
- Cook the Scrambled Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once melted, pour in the egg mixture and scramble gently with a spatula until just set. Remove from heat and set aside.
- Assemble the Sandwiches: Slice croissants in half horizontally, but not all the way through. Spread a generous amount of the Dijon honey spread on the inside of each croissant.
- Add Cheese: Place 2 slices of cheese on the bottom half of each croissant.
- Add Ham and Bacon: Layer a few slices of deli-sliced ham and 2 slices cooked bacon on top of the cheese.
- Add Eggs: Spoon a portion of the scrambled eggs over the ham and bacon.
- Close the Sandwiches: Fold the top half of the croissant over the fillings to form the sandwich.
- Toast the Sandwiches (Optional): For a crispy finish, melt 1 tablespoon of butter in a skillet over medium heat. Place the assembled sandwiches in the skillet and cook 2-3 minutes per side until croissants are golden and cheese is melted.
- Serve: Garnish with fresh chives if desired and serve hot.

- Use your favorite type of cheese to customize flavor.
- To save time, use pre-cooked bacon or cook bacon beforehand.
- The extra toasting step is optional but adds a wonderful crisp texture and melty cheese.
