Ingredients
Chicken:
- 2 lbs boneless, skinless chicken breasts
Sauce:
- 1 bottle (18 oz) Hawaiian-style or regular BBQ sauce
- 1 can (20 oz) pineapple chunks in juice, undrained
- 1 small red bell pepper, chopped
- 1 small onion, chopped
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
Garnish:
- Chopped green onions and sesame seeds for garnish (optional)
Instructions
- Step 1: Place the chicken breasts in the bottom of a 6-quart slow cooker.
- Step 2: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and easily shredded.
- Step 3: Serve warm over rice, in sandwiches, or in lettuce wraps. Garnish with green onions and sesame seeds if desired.
In a bowl, mix together the BBQ sauce, pineapple chunks with juice, red bell pepper, onion, soy sauce, garlic powder, ground ginger, and black pepper. Pour the mixture over the chicken.
Remove the chicken, shred with two forks, then return to the slow cooker and stir to coat in the sauce. Let it cook for another 10–15 minutes to absorb the flavors.
Notes
- For extra flavor, marinate the chicken in the sauce overnight before slow cooking.
- This recipe also works well with boneless chicken thighs.
- Leftovers make great tacos or sliders.
