Description

Crockpot Fiesta Chicken is a flavorful, easy-to-make slow cooker recipe perfect for busy days. Tender chicken breasts slow-cooked with a fiesta blend of ranch seasoning, Rotel tomatoes, black beans, corn, cream cheese, and fresh lime juice create a creamy, zesty dish that’s perfect for serving over rice, in tacos, or as a hearty main course.

Ingredients

Scale

Chicken and Seasonings

  • 4 boneless, skinless chicken breasts
  • 1 dry ranch dressing packet
  • 1 tsp onion powder
  • 1 tsp ground black pepper

Vegetables and Liquids

  • 1 can (15 oz) Rotel diced tomatoes
  • 1 can (15 oz) whole kernel corn
  • 1 can (15 oz) black beans
  • 1/2 cup chicken broth
  • 2 fresh limes, juiced

Dairy

  • 1 block (8 oz) plain cream cheese

Instructions

  1. Place chicken in Crockpot: Arrange 4 boneless, skinless chicken breasts evenly in the bottom of the Crockpot.
  2. Add beans, corn, tomatoes, and spices: Pour in the black beans, whole kernel corn, and Rotel diced tomatoes along with 1 teaspoon onion powder, ranch dressing packet, and ground black pepper, distributing ingredients evenly over the chicken.
  3. Add liquids and cream cheese: Squeeze the juice of 2 fresh limes over the mixture, pour 1/2 cup chicken broth on top, and place the block of 8 oz cream cheese on the surface.
  4. Cook in Crockpot: Cover and cook on HIGH for 3-4 hours or on LOW for 5-6 hours until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked and tender.
  5. Shred chicken and combine: Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the Crockpot and stir well to combine with the creamy and flavorful mixture.
  6. Serve: Serve the creamy fiesta chicken hot, perfect over rice, with tortillas, or alongside your favorite sides.

Notes

  • Check chicken temperature with a meat thermometer for safety; the internal temp should be 165°F.
  • For extra heat, add diced jalapeños or chili powder.
  • Can be served on tortillas for tacos or over rice for a complete meal.
  • Leftovers can be refrigerated for up to 4 days and reheated gently.
  • Cream cheese can be substituted with a lower-fat alternative if desired.
