Instructions
- Place chicken in Crockpot: Arrange 4 boneless, skinless chicken breasts evenly in the bottom of the Crockpot.
- Add beans, corn, tomatoes, and spices: Pour in the black beans, whole kernel corn, and Rotel diced tomatoes along with 1 teaspoon onion powder, ranch dressing packet, and ground black pepper, distributing ingredients evenly over the chicken.
- Add liquids and cream cheese: Squeeze the juice of 2 fresh limes over the mixture, pour 1/2 cup chicken broth on top, and place the block of 8 oz cream cheese on the surface.
- Cook in Crockpot: Cover and cook on HIGH for 3-4 hours or on LOW for 5-6 hours until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked and tender.
- Shred chicken and combine: Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the Crockpot and stir well to combine with the creamy and flavorful mixture.
